We’ve always heard that these always produce more then a family can eat, so we weren’t surprised when our one measly little plant quickly filled up our Fruit bowl:
Please ignore the cobwebs under the cupboards
I just had a baby Sheesh….. :)
Now, obviously we’ve got some overflow issues here.
I’ve made like 12 loaves of delicious Walnut Zucchini Bread:
But now I’m hoping for something different.
What else can I make with this stuff?
So I’m calling out for your favorite Zucchini recipes….
In return, I’m offering up one of my most favorite Fall Recipes:
Okay, so it’s not exactly my recipe,
(technically don’t have any recipes of my own making)
But I do make it every Fall, so I kind of own royalty fees and that’s the best I can do.
But be warned. This stuff is like edible GOLD. It will cause strife and jealousy, and overall greediness to enter your peaceful country home.
Look the little monsters won’t even take their mitts off it long enough to get a photo of it.
I suggest you set a few extras aside before you call in the troops.
It’s that good.
Now hit me with some Zucchini goodness!

I am in the same situation.
We have sliced them into 1/2 inch slices and dose them with garlic
salt and grill until tender.
You can also make an apple pie with them. It tastes just like apple pie!
Peal off green skin, remove soft seedy part and chop into chunks.
Make a normal apple pie but use zucchini instead.
You will never know the difference.
I also make a mean pumkin/zucchini bread. Do like you would any
loaf recipe (let me know if you need it) and add one cup of pumkin
puree and one cup shreaded zucchini.
I look forward to the rest of your responses!
Zucchini pie is identical to apple pie – use any apple pie recipe but
replace apple with zucchini. We use the Betty Crocker Cookbook but
you can use any apple pie recipe.
I bet you can’t hold back the snickers and grins during dessert!
Okay, I was reluctant at first to share, but I guess today is a good day
By the way your Zucchini’s are beautiful!!! Is it possible for me to grow a zucchini plant in a container? I prefer to do container plants vs in the ground. Anyhow, recently I spruced up a magazine receipe and made it my own. STUFFED zucchini. I gutted the veggie with a melon scoop, sateed it with various high end foods, such as: smoked guoda cheese, imitation crab (lol), tomatoe, , and baked it. I topped them with diced avacado. My kid-o’s loved them, and we actually ate them as a main dish. For some reason they were very fulfilling. Well, since I gave up my lovely stuffed zucchini do-dad. I really would love to have the recipe to the pie crust you used on you puff pasteries. They look nice and fluffy. Well, give it a try and tell me what you think.
Never mind on the pie dough, I failed to click the blue link :)
I also have tons of zucchini – and tomatoes. I have already made 2 batches of this salsa.

It’s so yummy.
I’ve also made zucchini bread and last year I made a soup and baby food.
You can also freeze it. Just shred it and freeze in sizes you’d need for a recipe.
I would put a bit extra in since I’m sure you’d lose some of it when it thaws and loses water.
